When it comes to ice cream flavor combination, I have certain unwritten, albeit strict rules:

1. Believe it or not, hot summer days are too warm to have something as "hot" and intense as chocolate, so I usually skip any chocolate flavor for something fresh, and possibly fruity. In the winter however, in those rare occasions I do get an ice cream (it's too cold!), I usually get a dark chocolate with a citrusy flavor (blood oranges!), or persimmon, or other winter fruit. Whipped cream on top is also only for winter to ease down the virility of these strong flavors. Too much for summer.🙅🏻‍♀️🍫

2. Unless it's some ice cream shop with too many weird flavors (out of season and/or bright colors fruit). In that case stick to the classics: chocolate, coffee, and these things. There's less chance of having unnatural, synthetic ingredients inside.

3. Golden rule: for every cone with a sweet flavor (custard, pistachio, walnuts, or anything based on creams as they say in Italy), there should be one very sour flavor, usually lemon or yogurt. Sometimes another citrus, rarely strawberries, if you know their fruit flavors aren't too sugary.🍋🍋🍋

4. You can bend these rules if you're at a very good and trusted ice cream shop, just to taste different things. (Not the sweetness vs. acidity, I just can't have an ice cream that's all too sweet). This cone is from @picogelato , in my opinion THE BEST gelato shop in Rome, with natural and intense flavors, where you can hardly make a mistake. My absolute favorite "pane, burro e marmellata", bread, butter and jam, and it's just delicious. They also have a couple of variations on yogurt (yay acidity!), and their fruit flavors are divine! Absolutely natural and always changing with the seasons. This one for example was with strawberries (light and not too sweet), white chocolate and Passionfruit (already balanced in sweetness and acidity), and dulce de leche, something they're very famous for.🍨
