These creatures are almost ready to eat. Unable to locate ingredients for a snail dish he was creating, Taylor Knapp, a chef who worked at the Michelin-starred restaurant @Nomacph, decided to start his own snail farm in New York. Peconic Escargot is now home to about 70,000 petit gris snails and one of the few farms certified by the USDA.
