It’s like a spicy satay inspired breakfast and takes about 10 minutes to knock up and packs a flavour PUNCH ???? - - - - - - - - - - - - - - - - - - - - - - You’ll need... - 2 eggs per person - 2tbsp natural almond or peanut butter of your choice (I like @picspeanutbutter) - Some of Jenny Gao’s delicious @flybyjing Sichuan Chilli Crisp - A handful of peanuts, pinenuts or anything you fancy for crunch - A green herb, parsley or cilantro - Bread, day old is always better for toast, sourdough is preferable and slice it on the thick side - - - - - - - - - - - - - - - - - - - - - - - Make sure your eggs are room temperature (most important!) - Bring a pan of water to a rolling boil, add the eggs and set a timer for 6 minutes 30 secs. Prepare a bowl of cold water - Toast your bread to your desired finish - Chop your peanuts/nuts - When the timer goes, remove the eggs and submerge in cold water, keep a tap running over them if you like - After two minutes in the cold, carefully peel your eggs, I always tap the fat end on the kitchen counter and start from the bottom but that’s just habit - Assemble your toast, nut butter first, then as much chilli sauce ?? as you want, cut the eggs in half, sprinkle with the peanut and garnish gayly with herbs. - Season with salt and pepper #symmetrybreakfast

You’ll need...
- 2 eggs per person
