I focus on vitamins and minerals when I eat, not counting things. I've been asked what I eat on days that I don't eat animal protein and if I eat tofu. Ummm...I eat everything except animal protein and no that doesn't mean tofu lol. I'm actually not an advocate of soy products at all. The main ingredients in this bowl are roasted vegetables with spices. Then we have protein and fiber rich chickpeas, millet, which is rich in calcium, magnesium and B-vitamins, and for freshness a cucumber tomato salad with lemon juice and mint. The best part is the large dollop of hummus in the middle – which is not only absolutely amazing but also full of B-vitamins and vitamin E from the tahini! - A day without animal protein for me consists of lots of fruits and veggies just like any other day and maybe just a little more emphasis on beans, lentils, grains and fats. I don't have a certain number of 'vegan days' per week. I just eat what I feel like having that day and quite simply I just don't feel like having meat some days. Once again...I'm not vegan, I have nothing against vegans and I do eat animal protein, just not everyday. I don't have a set 'daily diet' so don't ask. My food choices change everyday depending on what I feel like having! I've learned over a LOT of ups and downs just what listening to my body and trusting it REALLY means.
