Got milk? Or is that really a plant beverage? ? A seemingly existential debate is pitting the dairy industry against the makers of alternative milks and neighborhood baristas. In July, the commissioner of the FDA, Dr. Scott Gottlieb, made a surprising remark at a panel discussion in Washington. “An almond,” he said, “doesn’t lactate.” A growing number of Americans are embracing milks made from macadamias, almonds, quinoa, peas, rice, coconut, oats, soy, walnuts or cashews. Alt-milk trends tear through communities: New Yorkers recently experienced an oat milk shortage. The dairy industry argues that the word “milk” confuses consumers because it implies that the white liquid has a nutritional value similar to cow’s milk. But would you drink something called nut juice? Or almond beverage? At Swallow Cafe in Williamsburg, the baristas sell soy, almond, coconut, macadamia and oat milk, as well as a cannabis-infused latte. “We’ll still call it milk,” said Mark Garza, 31, who is the manager. “Everybody’s going to call it that.” Visit the link in our profile to read more, and to see more photos by @jensmortensenphotography.
