That's why when I get to the bottom of "real cooking" for real guests, I can hardly take any decent pictures that I would share here in the feed (also because I'm stuck in the world of grids, aesthetic and that sort of shit). The bbq in the picture belongs to my father, who like many other Iranian men is a master of kabab. Traditionally making kabab with lamb, chicken or mince meat used to be a masculine realm, where men rehearsed setting the fire, piercing the well marinated meat with huge skewers and cook it on the red hot coil as if they were the ancient hunter-gatherer version of themselves, providing the tribe with fresh game. Just like my mom enjoys the fame of being one of the best cooks in the family, my dad is know for his spectacular kababs, especially the chicken one — juje kabab. A couple of days ago I tried to make his juje kabab for the first time in my life (you might've seen the Stories, which now you can find in the Highlights under BBQ). To my pleasant surprise, my #jujekabab turned out exactly like it should have: slightly browned and sticky on the surface, juicy and well cooked inside. With that exact tangy flavor the yoghurt-saffron-onion-lemon marinate that makes you suck on your fingers after devouring each piece. Yes, it's to be eaten rigorously by hand, especially when "on the bone" (my favorite, the boneless chicken is just too dry for juje kabab). I took no pictures (also because I had one hand elbow-deep in the bag of marinated chicken and I was fanning the fire with the other), but it was a story worth to tell here nonetheless. So this is a homage to my father, who not only fed me with the best juje kabab, but also taught me how to make it, unintentionally. Can't wait to go back for more of his kababs soon!
