-- Snowflake Peppermint Cookies
Ingredients:
1/4 cup Chobani® Plain Non-Fat Greek Yogurt
2 3/4 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon baking powder
1/2 cup softened butter
1 1/2 cups sugar
1 egg
1/2 teaspoon peppermint extract
¼ cup crushed candy canes
Melted chocolate, for drizzling
Instructions
1. Preheat oven to 350º F.
2. Stir flour, baking soda, and baking powder in a small bowl.
3. With an electric mixer, beat butter, yogurt, and sugar in a large bowl until smooth.
4. Add egg allowing it to blend into butter mixture. Beat in peppermint extract. Mix in flour mixture until just incorporated.
5. On a lightly floured surface, roll out dough to ¼” thickness. Cut with snowflake cookie cutters and place 2 inches apart on parchment lined baking sheets. Sprinkle crushed candy canes on top of the cookies. Bake for 10 minutes, or until edges are very lightly browned. Let cool for 2 minutes on baking sheet. Remove from pans and cool completely on wire racks.
6. Once chilled, drizzle melted chocolate on top of the cookies.
