The Okura Sake Brewing Research Institute was founded on the grounds of the Kitagura Brewery, which was the principal brewing site at the time. It was relocated in 1912, when the new Taishogura Brewery was constructed (photo). In 1927, the Showagura Brewery was built from reinforced concrete, unusual for the time, and featured the latest equipment. The Brewing Research Institute was relocated to the grounds of the Showagura Brewery in 1939. Later, in 1982, it was relocated to the grounds of the main brewery, the Otegura Brewery, and today, as the Gekkeikan General Research Institute, it carries out basic research into all aspects of sake-brewing as well as the development of new products and techniques using biotechnology.
