A hearty pot of 3 Day Cassoulet, a holiday tradition for us that takes 3 days to cook (day 1: soak the Tarbais beans, day 2: stew up the duck confit, pork belly, and garlic sausage, and let sit overnight and eat on day 3). One of my favorites on our upcoming French Classics menu at U.P. at @DominiqueAnselKitchen in the #WestVillage. A full feast of traditional French recipes, complete with wine and cocktails, 5 kinds of classic cakes from all over France for dessert, and a few little surprises we’ve planned too.
