Gnocchi of ricotta and herbs, dressed in TONS of butter, mint and parmesan. I swear I had a tiny orgasm as I devoured that DIVINE melted butter! The flavor of mountains, concentrated in the fat of the purest milk, from the cows nurtured in these very mountains, with same herbs I can smell in the crisp air.

Today I hiked up in the mountains to reach Malga Priù, a pasture where they bring up cute, fluffy highlander cows that resist the cold temperatures up to -40 C! ????The malga is run by the elderly and delightful Renata, who is continuing her parents' job of raising the highlanders. They live here from May to October. She also runs an inn, she rents rooms and she cooks SPECTACULAR food. Some of the dishes are based on the meat of their own cows; ethical, healthy and beyond organic. She cooks dishes such as bread gnocchi: huge balls of bread, speck and cheese, sausage with polenta, spätzle, and other local dishes feel and taste much more Sloven/Austrian than Italian.
