Homemade Pici all’Aglione. Aglio e olio means garlic and oil. Aglione means very garlicky sauce. Very simple sauce made from olive oil, tons of crushed garlic, lots of fresh tomato, a little passata and torn basil. (Top)
Pici with wild boar sauce. This was made from the leftovers from the boar from the night before. I added stock, carrots, celery, onion, garlic, shredded/stewed boar, which had the scent of juniper and rosemary running through it. I added a little tomato paste and stock and served that with the pici. (Bottom)
