Post workout meal ? Dijon & balsamic marinated chicken with lemon pepper asparagus and a side of quinoa that I cooked with mushrooms tomatoes and spinach ?
I like to leave my marinades on for upwards of 6 hours so that the flavor really locks in. Yesterday I threw 3 butterflied chicken breasts into a ziplock bag with Dijon mustard, balsamic vinegar, a bit of chicken stock, minced garlic and chopped Italian parsley. I made sure the contents were well mixed together and the chicken was well coated and threw it in the fridge. Clean eating doesn't need to be boring! You don't have to eat boiled chicken, tilapia and asparagus everyday to see changes!
