That’s why I love my Pineapple Pakoras made with DOLE® Tropical Gold Slices, they help me make great recipes with straight out of the can convenience. Plus, they’re sweeter than Dole’s regular pineapple to make for a crispy, spicy and sweet treat that’s an excellent source of vitamin C. The turmeric brings out the already naturally golden in color juicy pineapple which pairs beautifully with my festive red & green chutneys. See my recipe below: Pineapple Slice Pakoras: - DOLE Tropical Gold Slice Pineapples - 1 cup besan (chickpea) flour - 1/4-1/3 cup DOLE Pineapple Juice - 1/4 tsp baking soda - 1 tbsp combined ground spices (coriander, cumin, red chilies, turmeric, ajwain, black pepper) - kosher salt - neutral oil for frying - chaat masala for garnish 1. Mix all ingredients for batter. Pat dry pineapple rings. Heat neutral oil in deep pot until 350 degrees. Dip pineapple rings in batter and fry 2-3 mins each side until golden brown. Red Chutney: - 2 roma tomatoes - 1 clove garlic - 1/4 tsp red chili powder - kosher salt - 1 stalk curry leaves - 1/4 tsp black mustard seeds - neutral cooking oil 1. Blend everything up until curry leaves w/2-3 tbsp water. Simmer for 5 mins until reduced. Transfer to bowl. Heat oil and temper spices, immediately pour over chutney & mix. Green Chutney: - 2 cups fresh coriander - 1 cup fresh mint leaves - 2 green chilies - 1/2 inch piece fresh ginger - 1/4 cup plain unsweetened plant based yogurt - 1 tsp fresh lemon/lime juice - kosher salt - pinch of sugar 1.
