Anyway, I went back to @saintpeterpaddo recently for the first time since 2019, and haven’t stopped thinking about it since. . I sat at the bar (it’s all bar seating now,  though extremely comfortable for lounging, I should add) for a long Sunday lunch, each course thrillingly perfect, starting with the best oysters I’ve ever eaten in my life, and I fear they’ve ruined me for all other oysters forever!  A couple each of Merimbula 3-year-old Rock Oysters; Shoalhaven 3-year-old Rock  Oysters; Tathra 4-year-old Rock Oysters; and Wapengo 5-year-old Rock Oysters. Quite simply a transporting experience. To accompany – and it was so divine, I kept on with it for the rest of lunch – the @aphelionwine Pir Chenin Blanc. Next, pic 2, a fish charcuterie plate, consisting of Marlin prosciutto; Yellowfin Tuna salami; Swordfish bacon; Rock Flathead mortadella; and under the radish scales lies a mound of Bonito rillettes. Quietly but emphatically sensational. Pic 3 is the extraordinary Balmain Bug: The most luscious crustacean, a species of slipper lobster, grilled and daubed with chilli-inflected mayonnaise. Pic 4 is the Crumbed Hapuka Cutlets with seaweed-salt-sprinkled chips and the Duckwood Farm green salad. My first ever tasting of hapuka, with its juicy white flesh, and this was almost ridiculously good. Still thinking, too, of the Murray Cod Kokotxas on toast and the @fiorebread sourdough with cultured butter.  I feel so deeply grateful to have experienced this, as is only right and proper. What Niland is doing is just good, true and rapturous beyond words.
