Cheesy and mushroom quesadillas with guacamole

For the quesadilla
2 x soft corn and wheat tortillas
35g grated mozarella
35g grated strong cheddar cheese
100g chestnut mushrooms, small dice
2 small spring onions, white and green finely chopped
A couple of pinches of smoked paprika
A couple of dried chilli flakes (optional)
A little olive or veg oil

For the guacamole
1 ripe avocado
20g finely chopped red onion
30g ripe tomato, core removed and finely chopped
1 tsp finely chopped fresh red chilli (or a dash of hot sauce)
Lime juice to taste, approx. half a lime
