I made these caramel almond crisps all the time when I lived in Paris. Add to cakes, desserts, ice cream or if you’re like me on your plain yoghurt in the morning.

Blitz these babies up and you have a praline magic dust that can be folded into whipped creams and mousses.

Caramel Almond Crisps

75g sugar
50g slithered almonds
25ml water

Add water and sugar to a pan. Put a medium heat and cook until a dark golden brown. Quickly mix in the almonds and spread on some non stick baking paper. Flatten if necessary with another baking sheet on top, using a rolling pin. Smash and use!
