Inspired by älplermagronen, Alpine farmers’ macaroni, @jbrothersmiller's Swiss twist on mac and cheese gets extra rich flavor and creaminess from gruyère and raclette. Älplermagronen is traditionally served with applesauce, so we added some shallots pickled in apple cider vinegar to add tart flavor and balance all that cheesy richness.
