Works for breakfast on a piece of toast, or lunch/dinner. You can add it to a bed of rice, quinoa or just eat it straight outta the skillet like me. The sausage is made with simple ingredients you actually know: water, pea protein, red bell peppers and oregano. No weird / hard to pronounce things in this bod! Also - pro tip… a squeeze of lemon juice on top of this sauté / hash situation is everything!! #Lightlife
Prep (5 minutes) Cook (15 minutes) Serves: 2 people
1 15-ounce can White Beans
3 Lightlife Plant-Based Italian Sausages, casing removed
2 tablespoons olive oil, plus more for drizzling
4 cloves garlic, roughly chopped
1 bunch shredded dinosaur kale, roughly chopped
1 lemon, juiced
Kosher salt and freshly cracked black pepper to taste
Drain and rinse the can of white beans.
Remove the Lightlife Plant-Based Italian Sausages from their casings and crumble into a cast iron skillet with the olive oil over medium-high heat, breaking up any large pieces with a wooden spoon.
When Lightlife Plant-Based Italian Sausages are almost cooked through, about 6-8 minutes, add beans and garlic toss until warm and fragrant. Add the chopped kale and stir until slightly wilted. Top with a drizzle of olive oil, a squeeze of lemon juice, and crushed red pepper flakes, if you crave some heat.
