I’ve been revisiting some of my old recipes (with 6 cookbooks/over 600 recipes I’ve forgotten a few or maybe that’s old age 😅). These dumplings are loosely based on ravioli I ate in Nice which are filled with leftover provençal stew. Instead of boiling them I cook them the way my old local Chinese dumpling place in Paris did (fry and steam to get a crispy base but a chewy skin). 🥟 The dumplings at my old local were cheap as chips and it was always fun to watch the dumpling making action in the kitchen.
