With a crispy exterior and a soft centre my cheese, black bean and pea waffles were devoured by my 3 and 1 year old aswell as the grown ups. Recipe originally in The Little Swedish Kitchen cookbook where I use butternut squash purée. Here I replace it with some tinned black beans I had leftover (175g) and cooked peas (125g) plus a generous handful of grated cheese (omit the cinnamon in the original recipe). I used buckwheat flour as I so happened to have it in the cupboard.
