A quick and easy vegan banana bread from my book Eat Smart! I’ve seen so many of you send me photos of this recipe recently so I thought I would share it with everyone 🍌🍞 Ingredients:
2 1/2 Ripe Bananas
1 1/2 cups Buckwheat Flour (215g)
3/4 cup Oat or Almond Milk (180ml)
1 cup Dates (180g)
1/4 cup Walnuts or Cashews (40g)
1 tsp Bicarbonate of Soda
Coconut Oil for greasing
Loaf Tin
Preheat the oven to 170C.
• Chop the dates and cashews. Mash the two bananas and slice the remaining half and set aside. • Stir the dry ingredients together in a mixing bowl; buckwheat flour, bicarbonate of soda and chopped cashews.
• Now stir in the chopped dates, mashed and sliced banana and oat milk. Mix together to combine.
• Grease the loaf tin with coconut oil and pour in the banana bread mixture. Use the back of a wooden spoon to smooth the top.
• Bake for 35-40 minutes until the top is golden and it’s cooked through. • Allow to cool before slicing (sorry Joe). The slices taste delicious when toasted too! Add any spread or toppings of your choice. I love chia jam, peanut butter and berries.
