@nigellalawson I love panzanella, but I am lazy, I just chop them up as is. ? sometimes I use really small tomatoes in different colors, just sliced in halves, looks so nice like little jewels. Always slice up dry loafs of levain or other sourdoughy type of bread, ready to get a second life in a panzanella. Makes me feel good about myself, saving old bread... ?

@desiree.marion my daughter has crohns. She is well now and adores tomatoes, but for years she was in big trouble if she dared eat any. Indeed tomatoes can be very inflammatory , maybe its the acidity, and even now she is careful with quantity. I've heard of some with ibd who can tolerate them, but I'd say a lot do not. So you do make a valid point. Thank you

Once skinned I brine them in a mix of water ,rice vinegar,lemon,soy sauce,few leaves ok Thai lime leaves,some capers and few fennel seeds. Try to believe abs wonderful on salads or plain for an explosion of taste

In central Italy normally you never skin tomatoes to make panzanella...and the stale bread is softened in water and then squeezed, not toasted... anyway this is how we make it here ...???

I just made this following the recipe in Kitchen! A couple of baguettes went stale really quickly in the heat ?, it's smelling pretty punchy..looking forward to tucking into it tomorrow ?
