"Another go at Veggie Lo Mein ? I used 8oz of Organic Brown Rice & Quinoa Spaghetti from TraderJoes but ramen noodles, lo mein noodles, brown rice spaghetti, regular spaghetti, udon noodles, all work! Cook noodles following package instructions & set aside. ?For veggies I sautéed 3 cloves minced garlic, 1 onion, 2 cups broccoli, 1 red bell pepper and 1 large zucchini. I also love it with snow peas, edamame, kale, spinach, carrots, green peas, mushrooms...etc. ?
Here’s what I did this time FOR THE SAUCE
3 tablespoons reduced sodium Tamari
1 teaspoon sesame oil
1 tablespoon mirin
1 teaspoon freshly grated ginger
Optional ? 1/2 teaspoon (or more) Sriracha or chili-garlic sauce ? When the veggies are sautéed, I add the noodles and sauce to the pan & give it a quick stir fry on high heat. Then it’s ready to plate."
