"Trying to get in touch with my Chinese side, and attempted to replicate the amazing garlic eggplant dish I had a few months ago. Soaked the eggplant in salt water for a bit to help draw out excess water and help keep their shape before rolling them in some flour (#glutenfree 1:1 works too for this or you can do cornstarch which is the preferred way for crisp) and then used both light and dark soy sauce (actually brings different flavors and coloring factors) from @Lee Kum Kee USA(李錦記). Pretty good way to meal prep! Eat this with a generous helping of rice. * -@huongryeats
