Really wanted the butternut squash with za’atar and green tahini sauce from #SimplyNigella but had no butternut to hand, only sweet potatoes. I’m wondering now whether I might not like this version even more. So, before you ask: sweet potatoes, chunked up and tossed with oil, za’atar and salt, given a blast in a hot oven then a longer time in a moderate oven; green tahini sauce made by blitzing tahini with parsley, thyme, coriander, garlic, lime juice, some water and salt with a stick blender. I feel I could eat this forever. (Can’t stop using this bowl, either @skandihus_london and, as ever, there’s some lovely @mudaustralia behind)
