Finally made it to Ganbara. I had first saw it when Tony Bourdain had this simple dish of mushrooms topped with egg yolk, and had known even then just by seeing it that it’d be great. And it was - salty, umami, deep and complex, all coated with the best sauce there is - sweet creamy egg yolk.
