The food of San Sebastián always looks surprisingly simple, like this almejas y arroz - just some clams, rice, and a light parsley sauce. Only they are the best clams (naturally salted, slightly crispy with a creamy center) with the best rice (every grain still intact and plump like sponges that soak up the clam juice and parsley). A mild sweetness of garlic and wine. There are no frills in the dining room at Ibai. Just 8 quiet tables, everyone forgetting to talk since we were all too busy eating.
