I know everyone comes to Elkano for the grilled fish, but this plate of Joselito jamon drizzled with just a bit of olive oil blew me away. Unliked most cured hams, the meat didn’t have that saltiness and instead tasted nutty, buttery, and full of umami. I mean, look at it.?
