Who says salads have to be boring? Not me!....well, not me anymore. I seriously used to be the most unhealthy vegetarian in the world. I would cringe at salads and instead try to fuel my body with bean and cheese burritos and bowls of Lucky Charms. No wonder I felt like crap most of the time! - Learning how to cook with real food has definitely adjusted my palate + changed my body. I no longer think of salads as the enemy, and when I'm fueling myself with lots of whole, nutrient-rich fare I feel AH-MAZING! On Monday, I'll be embarking on a 21-day journey to get myself back into the habit of fueling my body with delicious, healthy fare (like this mixed green salad!). - P.S. In the meantime, try out this salad recipe and let me know what you think! - MIXED GREENS WITH STRAWBERRY HERB DRESSING | Serves 1 - FOR SALAD: 2 cups mixed greens loosely packed 1/2 cup cucumber thinly sliced 1/2 cup green apple diced 1/2 avocado sliced or diced 2 tbsp sliced almonds - FOR DRESSING: 1/2 cup strawberries diced 1 tbsp fresh basil roughly chopped 1 tbsp olive oil 2 tsp fresh lemon juice 1 tsp maple syrup Pinch sea salt to taste Pinch ground pepper - INSTRUCTIONS: 1) Arrange salad ingredients on a large plate. 2) Puree the dressing ingredients in a blender or food processor. Taste and add more salt and pepper, if needed. Drizzle some of the dressing over salad (you may not need all of it). Eat immediately.

MIXED GREENS WITH STRAWBERRY HERB DRESSING | Serves 1

FOR SALAD:
