I don't often eat #pasta. Sometimes not even once a week. My Italian friends still can't figure this out, but my not eating pasta is due to laziness, fear of white carbs (I always have whole-wheat or spelt pasta at home) and lack of the right ingredient and/or will for making a decent pasta sauce. It's a sort of not-so-guilty pleasure that I keep for eating out (friends' kitchen also counts as "out"). Then I go for a decent pasta. Like this Amatriciana, rustic, dead delicious and pure Roman. A tomato sauce with guanciale (pork cheek bacon) and pecorino cheese. This one pictured is the dish @parisianinrome had last week at @lemeridienrome . Such a fun and tasty lunch, with a glass of wine. (Ok, many more glasses of wine ? ?). The bistrot is simple and stylish, there are few carefully chosen dishes in the menu, most rooted deep in the Roman "cucina povera", but revised by stellar chefs.
And Amatriciana is always Amatricina!
