Marhaf Homsi was not impressed with the baklava situation in New York. Before he and his wife, Nawal Wardeh, fled Syria last year, the couple had spent more than 30 years running a bakery in the city of Hama. When the city became too dangerous, they left. They arrived in the U.S. last March on permanent resident visas, feeling safe but with little to do. While they wait to hear whether their youngest son and his family will one day be able to join them, Marhaf focuses on the baklava, which they sell online at @syriansweetrefuge. The Syrian-style walnut #baklava – photographed here by @lisanicklin – is less intensely sweet than the sticky confection many Americans know. It’s lightly soaked in a lemon sugar syrup, instead of honey. If you want to make it yourself, use the best quality walnuts available and chop them by hand, as Marhaf does.
