It’s tangy, lightly sweetened, and as creamy and rich as can be. And it can be prepared in minutes for when a craving hits – and believe us, it will. KEY LIME AVOCADO PUDDING 2 large avocados, firm and ripe 4 tablespoons fresh squeezed key or regular lime juice Zest of 1 lime, finely grated 4 tablespoons pure maple syrup 4 tablespoons full-fat coconut milk 1/2 teaspoon vanilla extract Pinch sea salt Mint sprig and berries, for garnish 1. Place all ingredients, except mint and berries, into a blender or food processor. Blend or process until smooth and creamy. Stop and scrape down sides as needed. Taste and add more lime juice or maple syrup, if needed. 2. Divide between four small bowls, cover tightly, and chill until ready to serve. Garnish with fresh mint leaves and berries. Notes: Best eaten within 1-2 days. The pudding may darken a bit from oxidation after the first day, but will still taste great. Store leftovers in an airtight container in the fridge.
