The Novy Svet Winery is a small, yet leading sparkling-wine manufacturer in Crimea. It produces roughly 2 million bottles per year, ranging from sweet to brut. Employees perform “Dégorgement,” or disgorgement, which involves manually removing the aging cork to remove the frozen sediment that has built up during the aging process. Although modern practices use machines for this process, the winery employees seven women, all second or third generation disgorgers, to do it manually in the old tradition of the winery. The process takes only 50 seconds and the loss of wine is insignificant. After dégorgement, the bottles move on to “dosing,” where a machine adds wine and sugar to fill the missing plug space.
