Amazingly delicious & moist, gluten free pumpkin muffins. ?
One of my favorite snacks to make & keep in the house is different varieties of muffins. Since it's pumpkin season....??? 1 1/2 cups gluten free baking flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon of Himalayan sea salt
1 teaspoon pumpkin pie spice
Cinnamon
Nutmeg
Ginger
To taste (I went a little crazy ?)
1/3 cup melted coconut oil
2 large organic eggs
1 1/3 cup of organic pumpkin purée (or whole can or carton) whole foods has a good one!
1 1/4 cup coconut sugar
1 tablespoon coconut sugar
1 teaspoon of vanilla extract
1 tablespoon of cinnamon to sprinkle on top of muffins.
Preheat over to 350. Mix all dry ingredients together. In a separate bowl mix together pumpkin purée, sugar & vanilla.
Mix dry with pumpkin purée mixed ingredients, mix well. Divide equally into each cupcake holder. Mix extra cinnamon and sugar, sprinkle on top of east cupcake. Bake for 25 to 30 min depending on the size of the cupcake.
