Mixed with mint in North Africa, the desert inhabitants prefer the Chinese green tea, introduced here in the 18th century to the court of the Moroccan Sultan then afterwards to the Atlantic ports for all. The art to honor a guest is to make it foam (the boiled water looses its oxygen and in poring from the tea pot at around one meter high the beverage is a bit colder and oxygenated again for a better digestion).
