Old Polish Honey Cake - the most amazing christmas cake you've ever heard of. It takes 6 weeks to make it. Seriously. First you make gingerbread dough (crazy amount of butter, honey, sugar and homemade spice mix, some flour and baking soda) and you put it into the fridge for 6 weeks so it could ferment in cold. Three days before Christmas u bake it and as a result you get the most fluffy, delicate and aromatic honey cake ever. We've spreaded some black currant jam and nutella between the layers, coated it with chocolate ganache and sprinkled with toasted hazelnuts. Another three days and it will be ready. But even now... it's insane.
