Raspberry Coconut Breakfast Muffins ? These are super simple and great for on-the-go! In a big bowl chuck in: 1 and 1/2 cup oats, 2 eggs, 3/4 cup Greek yoghurt, 1/2 cup desiccated coconut, 1 tsp baking powder, 1/3 cup powdered sweetener (e.g. Stevia), and 1/4 cup almond milk. Mix mix mix. Then gently stir in 3/4 cup raspberries. Spray muffin liners with cooking spray to prevent sticking. Pour the mixture into muffin trays - it makes between 6-8 muffins. Pop some extra raspberries on top if you're feeling fancy. Bake at 180c for around 15-20 minutes. Demolish them ? #fitfam #fitness #eatclean
