I am excited to partner with @Chobani and present to you this delicious Saffron Cardamom Cake with Greek Yogurt glaze for Diwali. This cake is such a fun and unique twist to your usual Diwali sweets—all the familiar flavors, just in cake form. The Saffron and Cardamom Cake is made with Greek Yogurt, and we are also using a sweetened Greek Yogurt glaze to decorate the cake.

🌟 Ingredients 🌟

Saffron and Cardamom Cake
• 1 ½ cups all-purpose flour
• 3/4 cup granulated sugar
• ½ tsp baking soda
• 1 ½ tsp baking powder
• ½ cup Chobani Whole Milk Plain Greek Yogurt
• ¾ cup whole milk
• 1/3 cup any unflavored oil
• ¼ teaspoon cardamom powder
• Hefty pinch of saffron
• ¼ tsp kosher salt
Sweetened Greek Yogurt Glaze
• ¼ cup Chobani Whole Milk Plain Greek Yogurt
• ½ cup confectioners’ sugar
• 1 tablespoon milk
• 1/8 teaspoon cardamom powder
Cake Decoration
• Raw, unsalted chopped pistachios
• Edible rose petals (optional)

🥮 Directions 🥮
For the Saffron and Cardamom Cake:

1. Preheat oven to 350ºF.
2. Grease an 8” round cake pan and line with parchment paper at the bottom.
3. Slightly warm the milk and add the saffron strands and let it rest till you prepare the other ingredients.
4. Sift the flour into a mixing bowl and add the sugar, baking soda, baking powder, cardamom powder, and salt.
5. Add milk, oil, and Greek Yogurt to the dry ingredients. Mix until incorporated and no dry patches remain, being careful not to over-mix.
6. Pour the batter in the prepared cake pan and tap the pan to remove any air bubbles. Bake for 22-25 minutes, or until a toothpick or cake tester inserted into the center comes out clean. Let cool for 10 minutes before taking the cake out of the pan, then cool completely on a wire rack.
For the Greek Yogurt Glaze:

1. Add Greek Yogurt, sugar, milk, and cardamom powder to a large mixing bowl. Whisk to combine until smooth, removing any lumps. Add another tablespoon of milk if needed to give the glaze a thick, but flowy consistency.
2. Pour the glaze over the cooled cake on the wire rack, allowing some of the glaze to drip down the sides of the cake. Decorate the top of the cake with chopped pistachios and/or edible rose petals, if desired.
