One of my favourites: Salmon and Butter Bean Stroganoff 🤩

Charred leeks add a wonderful jammy sweetness, balanced out by the earthy mushrooms and creamy butter beans. These three ingredients can shine on their own as a fantastic vegan dinner too, if you leave out the salmon and replace the dairy with a plant-based alternative.

I especially love using butter beans here because it means there’s no need for rice, pasta, or potatoes - once it’s ready, that’s it!

All finished with a sprinkle of chives and a squeeze of lemon to cut through the creaminess. A winter classic ready for spring.
