I fried two tbsp of guanciale cubes (pancetta will do great as well), took the lardons out and fried cabbage on the leftover fat until it browned a bit at the bottom. Than I transfered it to the baking dish, coated with couple spoon of tallegio cheese sauce (4sp of tallegio melted with spoon of cream) and baked for 20 minutes. Than finished it with fine balsamico, salt, pepper, olive oil, pistachios and guanciale lardons.
