I love its crunch, i love the sweetness and the fact that it perserves so well in the fridge even when you forget about it for a while. Another fantastic thing about it is, that it's as amazing when eaten fresh or hot. Today I took two pieces of it and cut in half. I fried two tbsp of guanciale cubes (pancetta will do great as well), took the lardons out and fried cabbage on the leftover fat until it browned a bit at the bottom. Than I transfered it to the baking dish, coated with couple spoon of tallegio cheese sauce (4sp of tallegio melted with spoon of cream) and baked for 20 minutes. Than finished it with fine balsamico, salt, pepper, olive oil, pistachios and guanciale lardons. This dish would work as some fine side or heartwarming warm salad alongside sourdough toast. #comfortfood」2月16日 2時29分
