It has travelled west (like many other culinary ways) towards Azerbaijan, and you can find it also around Baku, as well as the Iranian Azerbaijan of course. Lavangi stuffing (which comes in variations based on season, sometimes with prune molasses!), is used not only for chicken and poultry, but also for fish! In fact trout with this filling has been my #Christmas Eve go-to recipe for years. ⠀⠀⠀⠀⠀⠀⠀⠀⠀ But there’s something soothing and comfortable about a roast chicken (and boy do we need some comfort). When it’s shiny and bright like a sun on the table, that comfort becomes festive too.
