As this pile of croissants looks very nice on the pic, I am far far away from beeing satisfied with these ones.

Rule no. 1 in the bakery is, that we can use Polish, unstandarised flours and as we get a nice results with bread it's pretty difficult to dial in some good, classical croissnt, that would be as light as crunchy with nicely defined honeycomb structure.

We do laminations, because we get this amazing cultured butter that gives tone of flavors, but our pastries have forms that do not require beeing so technical which is ok, because they're delicious anyway.

Today we had a breakthrough and with couple of tweaks I believe we could have a decent croissant. Some things gets time even if you change not one but few variables a time ;)
