Recipe Alert 🚨
Moringa Pesto - slight variation on the recipe from my cookbook (Zoe’s Ghana Kitchen) ...
2 garlic cloves peeled
120g spiced roasted cashews
125g wild rocket
Juice of half a large lemon 🍋
2 tsp moringa powder
1/2 tsp okra salt (reg sea salt will do)
1/2 tsp crushed alligator peppers (course ground black pepper will do)
100ml cold pressed pumpkin seed oil (for extra nutty depth - groundnut oil also delivers but extra virgin olive oil is okay too)
Half a de-seeded Serrano chilli (optional)
Basil to garnish

(I roast my raw cashews in my Suya spice blend and a little groundnut oil for about 25mins at 160C - you can use what ever amount of heat you’re comfortable with - it’s a little added kick I love)
