Every midsummer ☀️ I celebrate with friends and family with a feast, but for obvious reasons, could not this year. But that didn’t stop me from celebrating! I made Swedish meatballs (köttbullar) which were super delicious! Served it with a salad, mashed potatoes, and a few glasses of rosé 🍷 (for the adults of course). But the kids didn’t like it. What’s not to like? They’re bite sized balls with gravy, for crying out loud! Don’t they scream fun food? But nope. Ugh. So after all that work I made quesadillas. Basic AF. I don’t even know if I’m using that in the right context but it sure feels like it at the moment. 😆
