I realize that I have not made a lot of food with African origins, one in particular is Creole cuisine! Creole food is an intersection of Spanish, Haitian, French and West African influences, as shown in the variety of ingredients that make up jambalaya. Africa has been a major contributor to the cuisine of North and South America. However this contribution has long been overlooked, trivialized, or denied.  I am looking forward to learning, making and sharing more food content that reflects the African culinary contributions on the cuisine of this country. ✨
