"The focus is on shelf life and uniformity. But if we want them to take center stage, they have to be bred for deliciousness." With that in mind, he partnered with vegetable breeder Michael Mazourek and seed producer Matthew Goldfarb to create organic, non-GMO varieties, and gathered a network of farmers and chefs to grow them, cook them, and report back.
