Happy Sunday and happy Mother’s Day! Time to bake. I thought I’d re-post this video that was shot with my friends at @munchies last year, when I made DKA’s (Dominique’s Kouign Amann) in their test kitchen. It’s an ambitious recipe that takes practice, but the results are so satisfying. The DKA, which is similar to a caramelized croissant, will always be my favorite pastry to make and to eat. I changed up the classic Breton pastry a bit with my own version, one that’s lighter and less heavy and sweet, and it’s something we started serving at the Bakery when we first opened (almost 2 years before the Cronut®). It takes fast and steady hands, but with practice, you’ll get the lamination down to achieve those flaky tender layers on the inside and a crunchy caramelized crust on the outside.
