Cook time: 1 hour 45 mins -Ingredients:

3 medium Potatoes, thinly sliced
2 medium Onions, peeled, halved and then thinly sliced (alternately 2 Leaks)
2 medium Carrots, thinly sliced
300g/7oz Green Beans and or Broccoli, chopped small
1 can Chickpeas / Garbanzo Beans, drained and rinsed
3 Vegan Sausages, I’m using @lindamccartneyfoods (or 2 Vegan Burgers) wrapped in foil and baked in the preheated oven for 15 mins (or cooked per pack instructions). (Alternately 2 handfuls cooked Puy Lentils)
1 tablespoon Dried Mixed Herbs (or 2 tablespoons freshly chopped Herbs)
800ml or 3 1/2 cups Vegetable Stock mixed with 1 tablespoon Corn Flour (or All Purpose Flour), optional mix 1 tablespoon Vegan Worcester Sauce and 1 tablespoon Soya Sauce to the stock.
4 tablespoons Extra Virgin Olive Oil

Method: - Preheat Oven to 170C/ 340F.
- Wrap Vegan Sausages in foil and bake for 15 minutes to cook through (or per pack instructions) - Thinly slice the potatoes and start with placing 2 layers of the potatoes onto the base of the baking dish (about 11 inches wide)
- Thinly slice the onion and layer on top of the potatoes. - Repeat with the thinly sliced carrots. - Rinse the chickpeas / garnazo beans and evenly place over the carrots.
- Remove the vegan sausages from the over, and chop into bite size pieces and lay them on top of the chickpeas/beans.
- Now the layer of chopped green beans/broccoli.
- Sprinkle on the mixed herbs
- Top off with a layer of the remaining Potato slices over lapping to form the lid
- Mix 800ml / 3 1/2 cups Vegetable stock with 1 tablespoon of corn flour and stir in the optional Worcheser Sauce and Soya Sauce. - Slowly pour the Vegetable Stock over the Hot Pot. You want it to finish just below the top layer of potato.
- Evenly drizzle the extra virgin olive oil on top.
- Season with black pepper to taste.
- Cover the baking dish with baking foil and bake in the oven for 90 minutes.
- Remove the baking foil and put hot pot back in the oven for a further 15 minutes, until the top layer of potatoes are golden brown and slightly crisp.
