I was told making gluten free bread was impossible when diagnosed with celiac. Then told grain free vegan bread was impossible. WRONG. I did it anyway. In these days of what’s NOT possible let’s think about what IS!! Now to the bread
In the bowl of your standing mixer add
1 cup tigernut flour
3:4 cup cassava flour
3:4 cup tapioca starch or starch of choice
1:2 cup of coconut flour
1/3 cup mix of chia seeds and flax
1:4 cup psyllium husks powder
1 tsp instant yeast
1 1:2 tsp of salt
1 tsp sugar
1 1/2 tsp baking soda
1 tbsp baking powder combine
Then add
2 1/2 cup of warm water
2 tbsp olive oil
2 tsp apple cider vinegar
1 tsp honey
Combine slowly then go up to high speed. When dough sticks to sides whip with your paddle attachment for 3 minutes. Can add a touch more water if it’s not moving. When done place dough in a greased or parchment paper lined loaf pan. Wet hands and smooth out the top of the dough. Cover with a. Towel and sit in a warm area for 45 min. Heat oven to 400 and bake for 45 to 55 minutes. You must let sit to cook as this bread keeps cooking. This bread gets better with time. Sits in counter for 4 days (if it lasts) or slice and put in a freezer bag in freezer.
