Lomo saltado is one of the delicious dishes I had when I visited Peru a few years ago. It’s a celebrated dish that traces back to the the influx of Chinese immigrants in Peru that worked in the sugarcane and railroad industries. The soy sauce, ginger and stir fry method are distinctly Chinese while the addition of cumin and fries makes it Peruvian. It’s best to use aji amarillo pepper if you have access to but only used what I had in my pantry. Also used pilsner from @fallbrewingcompany instead of beef broth cuz’ ya gotta use what you already have! 🍺 Follow along in my highlights or story and to see how it’s done to make this comforting dish at home! #quarantinecooking
